BrianGreens describes these factors in the order of importance, beginning with supply and demand.
Apparently, between 1625 - 1750, sugar prices got as high or higher than equal weight in gold! Obviously, quantity and quality are also huge factors, What I didn’t realize was that delivery methods are also price factors. Things like the shipping line, destination port accessibility, and daily unloading capacity, can impact the final price. It’s a good article, if you’re interested in sugar.
